There are many varieties of chicken fry across the world. Guntur style chicken fry is a dish made by marinating boiled chicken pieces and frying them in oil along with variety of spices until they are crispy and golden brown. It is a popular side dish in many cultures and can be seasoned with various spices and herbs to add flavor. Sprinkle with coriander leaves, mint leaves and serve hot. Enjoy!
Ingredients
Half chicken
1/2 tsp turmeric powder
1 big onion (long slit cut)
3 green chillies (or to taste)
2 tsp ginger garlic paste
2 tsp red chili powder (or to taste)
4 tsp dry coconut pieces
2 tsp coriander seeds
2 tsp poppy seeds (Gasagasalu)
1 tsp salt (or to taste)
10 cashew nuts
1 tsp shahjeera
2 Cardamom
1 inch cinnamon stick
3 to 4 cloves
1/2 tsp pepper powder
Coriander leaves (Optional)
1/2 cup Oil
Instructions
Cut the chicken into 1-to-1.5-inch cube sized pieces.
Boil the chicken pieces in a bowl by adding salt, turmeric and 2 cups water.
In the meantime, prepare the ground paste, In a mixer, take dry coconut pieces, coriander seeds, poppy seeds, cinnamon, cloves, half cup onion, ginger garlic paste, some cashew nuts and grind to a thick paste, using water sparingly.
Marinate the boiled chicken for 1 hour by mixing prepared ground paste and red chilli powder.
Heat oil In a wide pan, fry ingredients like shajeera, cardamom, half cup onion, chilli, cashews. Remove them from pan after 3/4th fry and keep aside.
On a medium flame fry the marinated chicken in the pan, don't stir pieces often until chicken pieces are roasted.
Add fried ingredients, cashews, pepper powder and garam masala to the roasted chicken and fry a few more minutes untill gravy is dry and masala coated well over the chicken.
Garnish the chicken fry with coriander leaves.
